What is it?
Kaiware are sprouted daikon radish seeds. They have thin white stems capped with tiny green leaves. They have a peppery flavour reminiscent of mature daikon radish and give dishes a crunchy texture.
How can it be eaten?
Kaiware are eaten raw in salads, sushi, sandwiches, spring rolls and used to garnish sashimi.
