What is it?
Pea shoots are the young leaves of the pea plant.
How can it be eaten?
The stems and leaves are edible and tender enough to be eaten raw or with minimal cooking. The delicate pea-flavoured shoots can be added raw to salads, sandwiches and pasta dishes. They can also be used to garnish soups, cooked in stir-fries, and steamed or sautéed to make a side dish.
